Tofu Tortellini Pasta by KEFI Handmade

Ingredients :

  • Tofu – Thinly sliced
  • Brussel Sprouts – Cut in halves
  • Diced red Onions and Fresh Chopped Garlic
  • Cheese Tortellini Pasta
  • Pesto Sauce and Alfredo Sauce
  • Coconut Oil and Plant Based Butter
  1. Prepare the tofu : Start by thinly slicing tofu into strips. This will allow the tofu to absorb the flavors. Season tofu slices and place in the air fryer at 360 degrees for about 15 minutes or until crispy. This will add texture to the dish.
  2. Sauté the veggies : While the tofu cooks, on medium heat, sauté the chopped red onions and garlic until they turn golden brown. Next add the Brussel Sprouts to the mix, cooking them until they reach a tender consistency. If needed, add a small amount of coconut oil or butter for added flavor.
  3. Create the sauce : Introduce a tablespoon of pesto sauce along with a jar of homemade alfredo sauce to the sauteed veggies. Adjust the consistency by adding almond milk or water if the sauce appears too thick. Allow the mixture to simmer gently until it achieves a smooth and creamy texture.
  4. Cook the Tortellini : Add the cheese tortellini pasta to the simmering sauce, allowing it to cook until tender. This step allows the pasta to absorb the rich flavors of the sauce.
  5. Combine and Serve : Once the pasta is cooked until tender, retrieve the crispy tofu from the air fryer and incorporate it into the pasta and sauce mixture. Ensure that the tofu is evenly distributed, adding a delightful contrast of texture to each bite. Serve the Tofu tortellini Pasta hot, garnished with fresh herbs or a sprinkle of fresh grated cheese if desired.
